Tokito Yama Sauvignon Dry

鴇 ヤマ・ソービニオン 辛口

Red / 750ml / 12% ABV
By Winery Konohana

€21,00

A bold, wild-natured dry red from 100% Yama Sauvignon — a cross of Japanese wild grape and Cabernet Sauvignon. Rich acidity and bitterness with an elegant Cabernet aroma. Made in stainless steel without oak, so the grape speaks for itself. Best 2–3 years after vintage; a natural match for hearty meat dishes.

Product Description

Yama Sauvignon is a cross of Japanese wild grape and Cabernet Sauvignon — disease- and cold-hardy, high in both sugar and acid, with a thick, blue-black skin that gives an opaque, deep purple wine. Grown on own roots at 418 m in Tokito, Kosaka, on the volcanic plateau of the Lake Towada eruption.

Winery Konohana is a small winery in the Tokito district of Kosaka Town, Kazuno, located within the local shopping district of Hanawa itself. Working with Japanese wild-grape (yamabudo) hybrid varieties, it produces roughly 10,000 bottles a year, almost entirely by hand, without oak barrels — a natural-wine philosophy built around expressing the character of the land as directly as possible. The winery also produces cider from local apples.
