千代緑 純米大吟醸 No.12(180ml お試しサイズ)

Junmai Daiginjo / 180ml / 16.5% ABV
By Okuda Shuzoten

€10,00

Brewed with "Akita Yeast No. 12," developed by the Akita Prefectural Food Research Institute, and a blend of Miyamanishiki (78%) and Yamada Nishiki (22%) rice polished to 50%. Notes of banana and white grape lead into a plump sweetness and a clean, dry finish.

Product Description

Unlike the Essential and Premier bottlings, which use the brewery's own house-isolated yeast (MS3), this Junmai Daiginjo is brewed with "Akita Yeast No. 12" — a fruity, ester-forward yeast strain developed by the Akita Research Institute of Food and Brewing (ARIF). SMV +3.0, acidity 1.8, amino acid content 0.8 (reference values; figures vary by brewing year). A refined banana aroma gives way to a juicy sweetness and a crisp, dry finish.

Chiyomidori 千代緑

Founded during the Enpō era (1673–1681), making it one of Akita's oldest breweries at over 350 years. The brand name comes from a poem composed by the first owner, describing the lush green mountains visible from town in early summer. The shop and main building were designed by renowned postwar architect Seiichi Shirai and are registered as a National Tangible Cultural Property. One of the smallest breweries in the prefecture; the current 18th-generation owner, Shigenori Okuda, also serves as the brewmaster.
