€6,00
An ultra-dry Junmai from a brewery with over 350 years of history, fermented with the brewery's own house-isolated yeast. A refreshing pear-like aroma leads into a crisp, dry finish — a versatile companion for Japanese, Western, and Chinese cuisine alike.
Product Description
Brewed with the brewery's proprietary house-isolated yeast "MS3," discovered in the rafters of the brewery itself. Koji rice: Miyamanishiki; kake rice: Ginsan (both Akita-grown), polished to 50%/60%. SMV +8, acidity 1.7, amino acid content 1.0 — a clean, assertive dryness balanced by a delicate pear-like fragrance.

Chiyomidori 千代緑
Founded during the Enpō era (1673–1681), making it one of Akita's oldest breweries at over 350 years. The brand name comes from a poem composed by the first owner, describing the lush green mountains visible from town in early summer. The shop and main building were designed by renowned postwar architect Seiichi Shirai and are registered as a National Tangible Cultural Property. One of the smallest breweries in the prefecture; the current 18th-generation owner, Shigenori Okuda, also serves as the brewmaster.
