Part of the "Chitosezakari" series, which explores combinations of rice and yeast. Brewed with 100% Misato Nishiki rice from Ogata Village, polished to 55%, using Akita Bizakura yeast — a natural yeast cultured by the Akita Research Institute of Food and Brewing from the petals of Somei-Yoshino cherry blossoms at Kimimachizaka in Noshiro City. SMV +2.5. A full-bodied palate framed by a bracing acidity.

Chitosezakari 千歳盛
Founded in 1872, the sole sake brewery in Kazuno City. Named "Chitose" (a thousand years) by founder Mosuke Tamura as a wish for longevity, later renamed "Chitosezakari" in 1922. The company underwent wartime consolidation and postwar reorganization, becoming "Kazuno Meishu Co." before adopting its current name, Chitosezakari Shuzo, in 2019. Its brewing facility has a distinctive semi-underground structure built into a hillside, reflecting the brewery's philosophy: brewing small, brewing with care.
